Gärfix Spezial is a combined yeast and enzyme preparation for particularly hard fruits for mashing in. One pack is sufficient for up to 200 litres of mash. The pure-strain yeast contained in it supports a swift and complete fermentation, while the liquefying enzyme already included makes mash preparation easier.
For difficult fruits and raw materials
This Gärfix variant is particularly suitable for raw materials such as sloes, rose hips, rowanberries, gentian, quinces, roots or tubers. It is matched to mashes that are more difficult to liquefy or that require especially careful preparation.

Application and additions
For mashing in, Biogen-M is additionally required. The liquefying enzyme is already included in Gärfix. The alcohol content of fruit mashes generally lies, depending on the fruit variety, between approx. 2 and 8 %vol; Gärfix can produce a maximum of around 12 %vol of alcohol in the mash.
For monitoring the sugar content an Oechsle hydrometer is suitable. During fermentation the batch should be kept protected and pressure-free, for example with an airlock and a matching stopper for the airlock. With strongly foaming mashes an anti-foam agent can be helpful.
Which Gärfix variant is the right one?
For mashes of apples, pears or other pome fruit, Gärfix for Pome Fruit is the more appropriate choice. For stone fruit and berry fruit such as plums, cherries, apricots, raspberries or redcurrants, Gärfix for Stone and Berry Fruit is recommended. For raw materials that are difficult to process, such as sloes, rose hips, rowanberries, gentian or quinces, Gärfix Spezial is suitable.
